Salad: Grilled Chicken and Fresh Fruit Salad
- 4 chicken breasts
- salt to taste
- pepper to taste
- 6 cups mixed greens
- 4 cups assorted fresh fruit
Preheat grill or grill pan. Season chicken with salt and pepper as desired. Grill chicken until internal temperature of 160° is reached. Slice chicken into strips and set aside.
Clean and dry mixed greens and place in large bowl. Add fresh fruit (canned or jarred fruit may also be used, just remember to drain the juice). Mix the greens and fruit carefully with tongs or forks.
Evenly divide salad among four bowls. Place sliced chicken on top of salads. Drizzle with dressing (recipe below) and serve.
Salad Dressing: Ginger Soy Dressing
- 3 cloves garlic, minced
- 2 tbsp fresh ginger, minced
- 1 cup vegetable oil
- 1/2 cup soy sauce
- 3 tbsp honey
- 1/3 cup water
- 1 tbsp toasted sesame seeds
Finely mince garlic and ginger and place in large bowl. Mix in vegetable oil, soy sauce, honey, water and sesame seeds. Wisk until well blended. More or less honey may be used depending on your personal taste.
